Inspired by Céline Dion’s Only One Road, a song that shaped part of my life, Only One Rosé reflects my passion for wine and my love of learning about my true path. It represents a journey of discovery where memories lead us to the present, shaped by the dreams we have held close and those we have had to let go, all guiding me towards the understanding that this was the only road I was meant to take.
Winemaker notes: This 2025 Rosé is the first wine from Midnight Sounds, and I am genuinely proud of it. Originally a Grenache red, it evolved into a distinctive Rosé with the addition of Fiano, Riesling, and Gewürztraminer. Without temperature-controlled tanks or specialised equipment, this vintage tested patience and skill. There were moments of uncertainty during protein stabilisation, but persistence and care ensured the result. This wine reflects that journey, combining experimentation, dedication, and a commitment to quality.
Tasting Notes: This wine is a delicate Rosé, with gentle aromas of rose petals and creamy strawberries. Since bottling, the palate has developed, with the acidity now well integrated, giving a soft, textural mouthfeel with savoury tones of almond and a grapefruit citrus lift. As a unique style of Rosé, it is best served only slightly chilled, allowing the flavours to fully emerge. A gentle swirl helps open the bouquet and reveal its true depth. This wine is an excellent match for lighter dishes, where more powerful wines might overwhelm the delicate flavours. It pairs particularly well with salt and pepper squid, as well as a selection of cheeses, complementing rather than dominating the palate. I hope you enjoy this wine as much as I enjoyed making it.
Please note due to minimal intervention there may be little tartrate crystal (wine diamonds) once the wine is chilled. These are completely harmless.
